Abstract:

This paper deals with microbial synthesis of xanthan gum by Xanthamonascampestris strains and its applications in various industrial processes. The proposed biosynthetic pathway of xanthan synthesis by X. campestris strains andbiotechnological methods of improving xanthan production were discussed.The biotechnological parameters for efficient improvement ofxanthan yield andproductivity such as agitation rate, pH, temperature and various additives weredescribed. Furthermore, the applications of xanthan gum in the food, pharmaceutical, textile, oil drilling and cosmetic industries were presented.
