Abstract:

Gelatine is defined as a mixture of polypeptides obtained by partial non-enzymatic hydrolysisof collagen contained in bones and skins mainly bovines and/or pigs after the following treatments: degreasing, acid treatment, and/or alkaline treatment, washing, filtration, ion exchangeand sterilization. Gelatine is produced for consumption and industrial purposes, and it is widelyused as a component of various products.
