Lipases — tool in oils and fats biotechnology

Lipases (acylglycerol hydrolases EC 3.1.1.3) comprise a group of enzymes of widespreadoccurrence. Their biological function is to catalyse the hydrolysis of triacylglycerols to give freefatty acids, diacylglycerols, monoacylglycerols and glycerol. This reaction is reversible, so thatthe enzymes also catalyse the formation of acylglycerols. A feature which differs lipases fromother enzymes is their activity on water-insoluble substrates, at oil-water interface. Interest inlipases from different sources, in particular from microorganisms, has markedly increased inthe last decade due to the potential applications of lipases in food industry, chemical industry,chemistry, biochemistry and medicine.
